Day 64 Recipe 58

Pecan and rice croquettes graced our table tonight along with baked potatoes, sweet potatoes and salad. Sam called it "comfort food" and enjoyed it thoroughly as I did, as well. The croquettes are a nice meat alternative. Be sure to use enough Bragg's Aminos and red pepper. They really make the dish.

Tomorrow, Bill and Debra will be cooking with me and we are going to make Baked Onions with Nut Stuffing and Roasted Root Vegetables. I will send some photos of our creations. Till then....
